C&rsquo;est ce qu&rsquo;explique Jeanne Gabrysiak dans le num\u00e9ro de janvier d&rsquo;Agreste Primeur.  La fili\u00e8re laiti\u00e8re biologique affiche malgr\u00e9 tout en 2006 de meilleurs r\u00e9sultats qu\u2019en 2005.  La collecte, les conditionnements de lait et les fabrications de produits frais et de beurre sont bien orient\u00e9s. Mais le bio ne constitue toujours qu\u2019une infime partie de l&rsquo;activit\u00e9 laiti\u00e8re.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2008\/01\/laitbio.jpg\" alt=\"laitbio.jpg\" \/><\/p>\n<p>La collecte de lait de vache bio se stabilise \u00e0 219 millions de litres en 2006 alors que les livraisons de lait conventionnel aux laiteries reculent. Les quantit\u00e9s de lait bio sont multipli\u00e9es par quatre depuis 1998, mais l\u2019essentiel de la progression \u00e9tait acquis en 2002. La part du bio dans la collecte augmente, mais elle ne repr\u00e9sente en 2006 que 1% du total. Ce qui la situe bien loin des objectifs affich\u00e9s tant par le r\u00e9cent Grenelle de l\u2019environnement que par le r\u00e9cent plan d\u2019action \u00e0 l\u2019horizon 2012 du minist\u00e8re de l\u2019Agriculture. Les produits laitiers figurent pourtant avec les fruits et l\u00e9gumes et le pain parmi les aliments bio les plus consomm\u00e9s selon l\u2019Agence bio. Une partie de la collecte bio est toutefois d\u00e9class\u00e9e en lait conventionnel selon les calculs de l\u2019Office de l\u2019\u00e9levage. Cette proportion diminue en 2006.<\/p>\n<blockquote><p>La fili\u00e8re laiti\u00e8re biologique se concentre, \u00e0 l\u2019image de l\u2019ensemble de la fili\u00e8re. Les producteurs de lait bio sont moins de 1200 en 2006 soit une cinquantaine de moins qu\u2019en 2004. Une baisse moins forte que celle des \u00e9leveurs conventionnels.<\/p><\/blockquote>\n<p><strong>3% du lait conditionn\u00e9 <\/strong><\/p>\n<p>Principal d\u00e9bouch\u00e9 de la collecte laiti\u00e8re biologique: le lait conditionn\u00e9. A 103 millions de litres, sa production 2006 n\u2019a jamais \u00e9t\u00e9 aussi \u00e9l\u00e9v\u00e9e. Elle repr\u00e9sente 2,8% du total des laits conditionn\u00e9s. Elle en constituait 0,7% en 1998, puis 1,7% en 2000 et 2,5% de 2003 \u00e0 2005. Sa diffusion est facilit\u00e9e par le fait que le lait conditionn\u00e9 bio fait figure de pionnier en mati\u00e8re de fabrication biologique industrielle. De gros op\u00e9rateurs laitiers ont en effet permis d\u2019approvisionner les rayons des grandes surfaces de mani\u00e8re suivie. Le lait conditionn\u00e9 bio ne souffre de plus de la concurrence d\u2019aucun signe de qualit\u00e9. Les produits frais bio enregistrent \u00e9galement une forte croissance en 2006. La production atteint 15000 tonnes. Ce sont surtout des yaourts, et dans une moindre mesure des fromages frais de vache ainsi que des desserts lact\u00e9s. Le march\u00e9 du beurre bio est \u00e9galement porteur, alors que celui du beurre conventionnel se r\u00e9duit d\u2019ann\u00e9e en ann\u00e9e. Toutes ces fabrications se d\u00e9veloppent en 2006, m\u00eame si le beurre et les yaourts bio repr\u00e9sentent moins de 1% des fabrications totales. Au contraire, la cr\u00e8me conditionn\u00e9e, aux faibles tonnages, recule.<\/p>\n<p><strong>Fromages bio<\/strong><\/p>\n<p>L\u00e9ger fl\u00e9chissement \u00e9galement pour la production de fromages affin\u00e9s bio. L\u2019importance de ces produits demeure modeste. Les fabrications de fromage concernent plut\u00f4t des petits \u00e9tablissements qui peuvent avoir des difficult\u00e9s  \u00e0 approvisionner de mani\u00e8re r\u00e9guli\u00e8re les grandes surfaces.  La vente de fromages bio s\u2019effectue souvent sur les march\u00e9s.
