Grecs et Romains en faisaient un mets de choix. L\u2019auteur Th\u00e9ophraste (372-287 av. J.-C.) expliquait ainsi l&rsquo;origine des truffes : \u00ab\u00a0v\u00e9g\u00e9taux engendr\u00e9s par les pluies d&rsquo;automne accompagn\u00e9es de coups de tonnerre\u00a0\u00bb. Tous croyaient alors \u00e0 la g\u00e9n\u00e9ration spontan\u00e9e des champignons \u00ab\u00a0Enfants des Dieux\u00a0\u00bb et \u00ab\u00a0miracle de la nature\u00a0\u00bb.<br \/>\nMais \u00e0 qui l&#8217;empire romain doit-il la premi\u00e8re connaissance des truffes? Il est \u00e0 peu pr\u00e8s certain qu&rsquo;elles vinrent de Libye et d\u2019\u00c9gypte. Les ermites se sont-ils nourris de truffes du d\u00e9sert ? Les marchands caravaniers en ont-ils eu \u00e9cho et en ont-ils r\u00e9pandu dans toute l\u2019Europe ? On peut le penser. Le prototype des c\u00e9nobites du d\u00e9sert, c&rsquo;est Saint Antoine que l&rsquo;on repr\u00e9sente, dans les tr\u00e8s anciennes sculptures, avec un porc.<br \/>\nLes truffes qui se cultivaient et circulaient en Gaulle disparurent dans le grand cataclysme barbare. Les Maures connaissent la truffe et le grand m\u00e9decin arabe Avicenne en disait le plus grand bien et la recommandait aux malades.<br \/>\nIl faut ensuite attendre le haut du Moyen Age pour retrouver sa trace dans l&rsquo;histoire de France. Au quatorzi\u00e8me si\u00e8cle, elle fait son apparition \u00e0 la table des princes : des truffes sur la table lors du mariage de la reine Isabeau \u00e0 Paris en 1384. A la cour de Fran\u00e7ois 1er, la truffe \u00e9tait reconnue pour ses vertus puissamment aphrodisiaques.<br \/>\nEt c&rsquo;est \u00e0 la fin du XIX\u00e8me si\u00e8cle que le commerce de la truffe va conna\u00eetre un v\u00e9ritable essor : le d\u00e9veloppement rapide d&rsquo;une population ais\u00e9e dans la capitale et dans les grandes villes fit de la truffe un ingr\u00e9dient indispensable, un signe de reconnaissance, sans lequel un bon repas ne pouvait pr\u00e9tendre \u00e0 un certain standing.<br \/>\nParall\u00e8lement, le phyllox\u00e9ra qui s&rsquo;est abattu sur les vignobles \u00e0 partir de 1863 a contraint  beaucoup de viticulteurs \u00e0 se tourner vers d&rsquo;autres productions. Les vignes sont alors arrach\u00e9es et remplac\u00e9es par des truffi\u00e8res dont la rentabilit\u00e9 s&rsquo;av\u00e8re extraordinaire : la production de la premi\u00e8re d\u00e9cennie du XX\u00e8me si\u00e8cle s&rsquo;\u00e9levait \u00e0 pr\u00e8s de 2000 tonnes par an !<br \/>\nAutrefois, le sud-ouest fournissait l&rsquo;essentiel de la r\u00e9colte. A pr\u00e9sent, les deux tiers des truffes \u00ab\u00a0cav\u00e9es\u00a0\u00bb, c&rsquo;est-\u00e0-dire ramass\u00e9es, en France, proviennent de la r\u00e9gion Rhone-alpes. Pourtant, on les appelle encore \u00ab\u00a0truffes du P\u00e9rigord\u00a0\u00bb ou diamant noir.<br \/>\nCe sont les arbres truffiers (ch\u00eanes pubescents, ch\u00eane vert, noisetier ou m\u00eame tilleul) qui constituent les principaux partenaires de la truffe : \u00ab\u00a0le r\u00f4le silencieux de l&rsquo;arbre, presque silencieux et invisible, est complexe et bienfaisant\u00a0\u00bb Jean Pagnol.
