{"id":16566,"date":"2010-09-04T13:13:04","date_gmt":"2010-09-04T11:13:04","guid":{"rendered":"http:\/\/staging.sillon38.com\/?p=16566"},"modified":"2010-09-04T13:13:04","modified_gmt":"2010-09-04T11:13:04","slug":"le-boeuf-de-charolles-obtient-laoc","status":"publish","type":"post","link":"https:\/\/www.sillon38.com\/blog\/2010\/09\/04\/le-boeuf-de-charolles-obtient-laoc\/","title":{"rendered":"Le B\u0153uf de Charolles obtient l\u2019AOC"},"content":{"rendered":"<table border=\"0\">\n<tbody>\n<tr>\n<td><img loading=\"lazy\" decoding=\"async\" style=\"width: 156px; height: 119px;\" src=\"http:\/\/www.inao.gouv.fr\/repository\/editeur\/images\/communique_2010\/boeuf_charollesinternet.jpg\" alt=\"\" width=\"227\" height=\"181\" \/><\/td>\n<td>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">Le d\u00e9cret homologuant le cahier des charges de l\u2019appellation d\u2019origine contr\u00f4l\u00e9e \u00ab B\u0153uf de Charolles \u00bb a \u00e9t\u00e9 publi\u00e9 au Journal Officiel de la R\u00e9publique Fran\u00e7aise du 2 septembre 2010.<\/span><\/span><\/p>\n<p align=\"justify\">\n<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">Cela fait suite \u00e0 l\u2019avis favorable rendu par le Comit\u00e9 national des appellations laiti\u00e8res, agroalimentaires et foresti\u00e8res de l\u2019INAO lors de sa s\u00e9ance du 2 avril 2010, pour la reconnaissance en AOC du \u00ab B\u0153uf de Charolles \u00bb. <\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">Avec la publication de ce d\u00e9cret, l\u2019AOC \u00ab B\u0153uf de Charolles \u00bb devient la quatri\u00e8me appellation d\u2019origine contr\u00f4l\u00e9e en viande bovine<\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">La viande \u00ab B\u0153uf de Charolles \u00bb se reconna\u00eet \u00e0 son grain particulier, \u00e0 sa surface lisse, douce et soyeuse au toucher et \u00e0 sa couleur rouge \u00ab vif \u00bb. Les animaux \u00ab B\u0153uf de Charolles \u00bb de race charolaise, ont un profil boucher tr\u00e8s marqu\u00e9 qui se caract\u00e9rise par de belles proportions et une ossature peu d\u00e9velopp\u00e9e. Cette viande tr\u00e8s r\u00e9put\u00e9e tire ses principales caract\u00e9ristiques des p\u00e2turages sp\u00e9cifiques au sein d\u2019un milieu bocager sur lesquels l\u2019\u00e9levage des bovins est r\u00e9alis\u00e9. <\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">La production du \u00ab B\u0153uf de Charolles \u00bb est r\u00e9partie sur les r\u00e9gions Bourgogne et Rh\u00f4ne-Alpes et concerne 355 communes localis\u00e9es sur les d\u00e9partements de la Loire, du Rh\u00f4ne, de la Sa\u00f4ne et Loire et de la Ni\u00e8vre. <\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\"> Cette aire g\u00e9ographique repose sur le berceau historique de la race charolaise dont les conditions climatiques ainsi que les caract\u00e9ristiques du sol favorisent l\u2019\u00e9levage et l\u2019engraissement des bovins. Le savoir-faire des \u00e9leveurs, propre \u00e0 la s\u00e9lection des bovins s\u2019est maintenu depuis 300 ans pour t\u00e9moigner aujourd\u2019hui d\u2019un v\u00e9ritable produit de qualit\u00e9, dont 258 tonnes ont \u00e9t\u00e9 commercialis\u00e9es en 2009. <\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">Le \u00ab B\u0153uf de Charolles \u00bb pr\u00e9sente des caract\u00e9ristiques organoleptiques marqu\u00e9es qui s\u2019expriment notamment par sa grande tendret\u00e9, sa forte jutosit\u00e9, son intensit\u00e9 aromatique et sa saveur faiblement acidul\u00e9e.<\/span><span style=\"font-size: x-small;\"><br \/>\nCe produit d\u2019exception par ses volumes de production limit\u00e9s, en font une viande pris\u00e9e par les meilleurs artisans bouchers<\/span><\/span><\/p>\n<p align=\"justify\"><span style=\"color: #000000;\"><span style=\"font-size: x-small;\">Donn\u00e9es chiffr\u00e9es 2009 : 150 producteurs,
