Le projet, port\u00e9 conjointement par l&rsquo;ADAYG (association pour le d\u00e9veloppement de l&rsquo;agriculture grenobloise) et le MIN (march\u00e9 d&rsquo;int\u00e9r\u00eat national) de Grenoble est en gestation. Cette unit\u00e9 de transformation pourrait, en principe, se situer dans les locaux du MIN.<\/p>\n<p>Une centaine d\u2019agriculteurs de l&rsquo;Y grenoblois sont sp\u00e9cialis\u00e9s dans le mara\u00eechage et produisent bien \u00e9videmment de la salade, mais aussi des haricots verts, des pommes de terre, des poireaux, des radis, des navets, des blettes, des \u00e9pinards, des choux, des c\u00e9leris, etc&#8230; que l\u2019on retrouve frais sur les march\u00e9s locaux . Mais jamais dans les cuisines de la restauration collective  o\u00f9 la plupart des l\u00e9gumes utilis\u00e9s aujourd\u2019hui, sont d\u00e9j\u00e0 \u00ab pr\u00eats \u00e0 l\u2019emploi \u00bb (lav\u00e9s, \u00e9pluch\u00e9s, conditionn\u00e9s).<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2008\/05\/salade.jpg\" alt=\"salade.jpg\" \/><\/p>\n<p><em>(Photo ADAYG)<\/em><\/p>\n<p>Bref, les produits locaux \u00ab bruts \u00bb n&rsquo;ont pas acc\u00e8s \u00e0 ce march\u00e9 pourtant en forte croissance chaque ann\u00e9e. Les chiffres sont \u00e9loquents: actuellement, 70 % des repas de midi sont consomm\u00e9s hors foyer. C&rsquo;est ce qui a incit\u00e9 l&rsquo;ADAYG &#8211; d\u00e9positaire de la marque \u00ab\u00a0Terres d&rsquo;ici\u00a0\u00bb- \u00e0 r\u00e9fl\u00e9chir \u00e0 ce projet qui offrirait de nouveaux d\u00e9bouch\u00e9s \u00e0 la production maraich\u00e8re grenobloise en proposant des l\u00e9gumes pr\u00eats \u00e0 l&#8217;emploi aux cuisines des entreprises de restauration collective. Les collectivit\u00e9s jouent un r\u00f4le central sur ce march\u00e9 en tant que donneurs d&rsquo;ordre et dans la d\u00e9l\u00e9gation de ce service par appel d&rsquo;offre.<\/p>\n<p>Quelles fonctions de transformation pr\u00e9voir, quel co\u00fbt ? Est-ce qu&rsquo;une fois transform\u00e9s, les produits sont comp\u00e9titifs sur le march\u00e9 ? Quel est le march\u00e9 local ?  Ce travail a \u00e9t\u00e9 confi\u00e9 \u00e0 des consultants tr\u00e8s sp\u00e9cialis\u00e9s du march\u00e9 de la 4e gamme et de la conception de ce type d&rsquo;unit\u00e9.<\/p>\n<p>L&rsquo;ADAYG a fait part des r\u00e9sultats de cette \u00e9tude dans sa lettre d&rsquo;information n\u00b05. Trois conditions \u00e9mergent pour que ce projet devienne r\u00e9alisable:<\/p>\n<p>&#8211; une prospection commerciale permettant de trouver des d\u00e9bouch\u00e9s suffisants (l&rsquo;\u00e9tude estime n\u00e9cessaire un volume de commandes de 30 000 repas\/jour)<\/p>\n<p>&#8211; l&rsquo;obtention de subventions issues des entreprises priv\u00e9es et publiques (l&rsquo;\u00e9tude estime n\u00e9cessaire un niveau de 55% de subventions)<\/p>\n<p>&#8211; une organisation satisfaisante de l&rsquo;approvisionnement (l&rsquo;\u00e9tude estime n\u00e9cessaire une augmentation des volumes: 2 tonnes\/jour minimum)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>La cr\u00e9ation d&rsquo;une l\u00e9gumerie pourrait \u00eatre un passeport pour le march\u00e9 local de la restauration collective.
