Ce succ\u00e8s local est le fruit d\u2019un travail collectif qui peut para\u00eetre bien modeste pour d\u2019autres fili\u00e8res qui arrivent aujourd\u2019hui, comme la comt\u00e9, \u00e0 produire 60 000 tonnes par an.<\/span><\/p>\n<p><span style=\"color: #000080;\">Le Bleu du Vercors-Sassenage AOP, plus petite AOP fromag\u00e8re de France, est un fromage onctueux l\u00e9g\u00e8rement parsem\u00e9 de moisissures qui lui donnent ce petit go\u00fbt de noisette, de sous-bois et de champignon.<br \/>\n41 producteurs de lait, r\u00e9partis sur la zone AOP (qui a la particularit\u00e9 d\u2019\u00eatre enti\u00e8rement comprise dans le Parc Naturel R\u00e9gional du Vercors), travaillent minutieusement, au quotidien \u00e0 produire un lait de tr\u00e8s bonne qualit\u00e9 tout en pr\u00e9servant leur environnement et la bonne sant\u00e9 de leurs animaux.<br \/>\nChaque ann\u00e9e ils s\u2019engagent un peu plus dans des d\u00e9marches de durabilit\u00e9 :<br \/>\n\u2022 Interdiction des OGM dans un d\u00e9lai de 5 ans<br \/>\n\u2022 D\u00e9veloppement d\u2019une fili\u00e8re \u00ab bio \u00bb AOP bleu du Vercors-Sassenage<br \/>\n\u2022 Int\u00e9gration de la biodiversit\u00e9 dans leur syst\u00e8me de production : concours prairies fleuries avec r\u00e9flexions engag\u00e9es sur les plantes fourrag\u00e8res et la diversit\u00e9 floristique, pr\u00e9servation de la faune en retardant les fauches, en privil\u00e9giant les haies.<br \/>\n\u2022 D\u00e9veloppement du s\u00e9chage en grange.<br \/>\nL\u2019AOP a permis d\u2019installer 9 ateliers fermiers sur la zone. Cette fabrication avait compl\u00e8tement disparu apr\u00e8s la deuxi\u00e8me guerre mondiale mais la m\u00e9moire des anciens et la fougue des jeunes agriculteurs ont permis une renaissance du fromage du pays dans les fermes. En 2011, ils ont produit 38 tonnes de bleu du Vercors-Sassenage.<\/span><\/p>\n<p><span style=\"color: #000080;\">La coop\u00e9rative Vercors Lait a vu en 2011 sa production de Bleu du Vercors Sassenage \u00e9galement augmenter.
