Synonyme  pour le public de bon go\u00fbt mais aussi souvent d\u00b4alimentation saine, \u00ab la  tradition \u00bb est aussi et surtout un formidable argument de vente pour  de nombreux industriels, commer\u00e7ants et m\u00eame restaurateurs. <\/span><\/p>\n<p><span style=\"color: #000080;\">Alors, qui  sont ceux qui parient sur la carte \u00ab \u00e0 l\u00b4ancienne \u00bb pour doper leurs  ventes ? Recettes secr\u00e8tes, go\u00fbts diff\u00e9rents mais aussi emballages  savamment \u00e9tudi\u00e9s, comment donne-t-on aux produits ce doux parfum  d\u00b4antan qui pla\u00eet tant ? Des fabricants de yaourts fermiers au retour de  la bonne vieille cocotte, des nouveaux marchands de l\u00e9gumes frais aux  restaurateurs qui misent sur les plats de grand-m\u00e8re, Capital vous  r\u00e9v\u00e8le comment la tradition fait aujourd&rsquo;hui recette dans l\u00b4alimentaire.<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>Parmi les sujets trait\u00e9s:<\/strong><br \/>\n<em>Yaourts : c\u00b4est dans les vieux pots qu\u00b4on fait les nouvelles fortunes. <\/em><\/span> <span style=\"color: #000080;\"><br \/>\nKerRonan, Kereu, Malo, La Fermi\u00e8re : des marques de yaourts a priori peu  connues mais qui font des cartons dans les rayons en pariant sur le bon  go\u00fbt de la ferme.  Le \u00ab yaourt tradition \u00bb, c\u00b4est LA tendance du  moment. Le march\u00e9 a progress\u00e9 de 30 % en deux ans ! Et pourtant ces  produits sont souvent deux \u00e0 trois fois plus chers que des desserts \u00ab  nature \u00bb basiques. Alors, comment ces petites marques ont-elles r\u00e9ussi \u00e0  faire leur trou \u00e0 c\u00f4t\u00e9 des g\u00e9ants des produits laitiers ? Et comment  ceux-ci sont-ils en train de  r\u00e9pliquer ?<\/span><\/p>\n<p><em>Fruits et l\u00e9gumes : le retour des halles <\/em><span style=\"color: #000080;\"><br \/>\nElles avaient quasiment disparues depuis l\u00b4av\u00e8nement des supermarch\u00e9s :  les halles sont de retour. Dans de nombreuses villes de province, elles  ambitionnent de ranimer le coeur de la cit\u00e9 en proposant une id\u00e9e simple  aux consommateurs : acheter leurs fruits et l\u00e9gumes, mais aussi leur  viande directement aux producteurs qui viennent les vendre \u00e0 la ville  plut\u00f4t que dans un rayon d\u00b4hyper.L\u00b4argument : la fra\u00eecheur, la  provenance et parfois le prix. \u00c7a marche tellement bien que certains ont  d\u00e9cid\u00e9 de cr\u00e9er des cha\u00eenes de halles \u00e0 l\u00b4ancienne, aiguisant du m\u00eame  coup l\u00b4app\u00e9tit de la grande distribution qui n\u00b4entend pas se laisser  faire.
