La reconnaissance de la cr\u00e8me de Bresse devrait suivre. <\/strong><br \/>\nFin janvier, le Comit\u00e9 national des appellations d\u2019origine  laiti\u00e8res, agroalimentaires et foresti\u00e8res de l\u2019INAO avait approuv\u00e9, les  projets de cahiers des charges \u00ab\u00a0<em>cr\u00e8me de Bresse<\/em> \u00bb  et \u00ab\u00a0<em> beurre de Bresse<\/em> \u00bb dans la perspective d\u2019une reconnaissance en appellation d\u2019origine contr\u00f4l\u00e9e (AOC) de ces produits.<\/span><\/p>\n<blockquote><p><span style=\"color: #000080;\">La cr\u00e8me et le beurre de Bresse sont tous les deux des produits tr\u00e8s  pris\u00e9s des cuisiniers et p\u00e2tissiers. Depuis le 19\u00e8me si\u00e8cle, ils sont  des ingr\u00e9dients de choix qui sont utilis\u00e9s ou qui accompagnent notamment  des plats de la gastronomie bressane et lyonnaise.<\/span><\/p><\/blockquote>\n<p><span style=\"color: #000080;\"><strong>La production de cr\u00e8me et beurre de Bresse <\/strong> concerne  la m\u00eame zone g\u00e9ographique et est r\u00e9partie sur les d\u00e9partements de  l\u2019Ain, du Jura et de la Sa\u00f4ne-et-Loire. Cette zone traditionnelle de  fabrication de cr\u00e8me et de beurre se caract\u00e9rise notamment par une  diversit\u00e9 de sa flore et une culture du ma\u00efs, deux \u00e9l\u00e9ments concourant \u00e0  l\u2019alimentation des vaches laiti\u00e8res et caract\u00e9risant la cr\u00e8me et le  beurre de Bresse. Ce syst\u00e8me d\u2019alimentation mixte assure en effet, de  par la pr\u00e9sence du ma\u00efs un lait riche en mati\u00e8re grasse et du fait de  l\u2019apport d\u2019herbe dans la ration alimentaire un lait d\u2019une coloration  soutenue.<\/span><\/p>\n<h2><span style=\"color: #000080;\"><a name=\"h2_rappel-sur-l'appellation-d'origine-controlee-(aoc)\"><\/a>Rappel sur l\u2019Appellation d\u2019origine contr\u00f4l\u00e9e (AOC)<\/span><\/h2>\n<p><span style=\"color: #000080;\"><a href=\"http:\/\/alimentation.gouv.fr\/les-appellations-d-origine\">L\u2019appellation d\u2019origine contr\u00f4l\u00e9e<\/a> est un signe fran\u00e7ais qui d\u00e9signe un produit dont toutes les \u00e9tapes de  fabrication (la production, la transformation et l\u2019\u00e9laboration) sont  r\u00e9alis\u00e9es selon un savoir-faire reconnu dans une m\u00eame zone g\u00e9ographique,  qui donne ses caract\u00e9ristiques au produit.<br \/>\nUne fois le cahier des charges homologu\u00e9, le dossier sera transmis \u00e0 la Commission europ\u00e9enne pour son enregistrement en <a href=\"http:\/\/alimentation.gouv.fr\/les-appellations-d-origine\">AOP<\/a>.<br \/>\nComme pour tout produit sous signe identification d\u2019origine et de  qualit\u00e9, des contr\u00f4les r\u00e9alis\u00e9s par des organismes ind\u00e9pendants  permettent de s\u2019assurer du respect des conditions et de la zone de  production au travers d\u2019un plan de contr\u00f4le valid\u00e9 par l\u2019INAO.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Apr\u00e8s plus de 10 ans
