Verviers \u00e9tant un chef-lieu d&rsquo;arrondissement en province de Li\u00e8ge<\/span><\/p>\n<p><span style=\"color: #333399;\">La confr\u00e9rie qui assure la promotion de cette fameuse tarte est la <strong><span style=\"font-size: small;\">La Seigneurie              de la Vervi-Riz.<\/span><\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>La Seigneurie s&rsquo;est              fix\u00e9 pour buts :<br \/>\n\u2022 De faire conna\u00eetre et appr\u00e9cier en Belgique et              \u00e0 l&rsquo;\u00e9tranger la BONNE TARTE AU RIZ produite \u00e0              Verviers depuis plusieurs si\u00e8cles.<br \/>\n\u2022 De promouvoir les traditions de qualit\u00e9 qui font la              renomm\u00e9e de la tarte au riz.<br \/>\n\u2022 D&rsquo;organiser des f\u00eates gastronomiques et folkloriques              qui remettent \u00e0 l&rsquo;honneur ce produit bien de chez nous.<br \/>\n\u2022 D&rsquo;envoyer des ambassadeurs pour la repr\u00e9senter lors              de manifestations organis\u00e9es par les confr\u00e9ries belges              et \u00e9trang\u00e8res. <\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>Sa pr\u00e9sence au d\u00e9part du tour 2012 \u00e0 Li\u00e8ge \u00e9tait donc normale&#8230;<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>Voici la recette de la fameuse tarte au riz<br \/>\n<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong> Pour le riz <\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\">1 litre de lait<\/span><\/p>\n<p><span style=\"color: #333399;\">135 grammes de riz rond<\/span><\/p>\n<p><span style=\"color: #333399;\">185 grammes de sucre fin<\/span><\/p>\n<p><span style=\"color: #333399;\">1 b\u00e2ton de cannelle (ou cannelle en poudre)<\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>Pour la p\u00e2te tarte<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\">100 grammes de farine<\/span><\/p>\n<p><span style=\"color: #333399;\">5 centilitres de lait (ou eau)<\/span><\/p>\n<p><span style=\"color: #333399;\">5 grammes de levure<\/span><\/p>\n<p><span style=\"color: #333399;\">2,5 grammes de sucre fin<\/span><\/p>\n<p><span style=\"color: #333399;\">2 grammes de sel<\/span><\/p>\n<p><span style=\"color: #333399;\">30 grammes de beurre<\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>Pour la garniture<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\">1 \u0153uf<\/span><\/p>\n<p><span style=\"color: #333399;\">1 jaune d\u2019\u0153uf <strong> <\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong> <\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>1<sup>\u00e8re<\/sup> \u00e9tape\u00a0: Pr\u00e9paration du riz<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\"><strong> &#8211; <\/strong>Chauffer le lait au bain marie et porter \u00e0 \u00e9bullition.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Verser le riz dans le lait et m\u00e9langer r\u00e9guli\u00e8rement pendant une heure.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Mettre le b\u00e2ton de cannelle dans la casserole et rajouter ensuite le sucre.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; M\u00e9langer r\u00e9guli\u00e8rement pendant 30 minutes.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Une fois que le riz est consistant, placer dans un r\u00e9cipient et r\u00e9server au r\u00e9frig\u00e9rateur pendant 24 heures.<\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>2<sup>\u00e8me<\/sup> \u00e9tape\u00a0: Confection de la p\u00e2te \u00e0 tarte<\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Mettre la farine, la levure et le lait dans un  grand bol. M\u00e9langer avec les mains pendant une vingtaine de minutes.  Laisser reposer dix minutes.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Ajouter ensuite le sucre et le sel et m\u00e9langer \u00e0 nouveau pendant une vingtaine de minutes.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Ajouter ensuite le beurre et m\u00e9langer quelques minutes.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Faire une boule de p\u00e2te et laisser reposer pendant environ une heure sous un essuie.<\/span><\/p>\n<p><span style=\"color: #333399;\"><strong>3<sup>\u00e8me<\/sup> \u00e9tape\u00a0: Confection de la tarte au riz<\/strong><strong> <\/strong><\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Abaisser la p\u00e2te \u00e0 l\u2019aide d\u2019un rouleau \u00e0 tarte.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Enduire un plat \u00e0 tarte de mati\u00e8re grasse et placer la p\u00e2te dans le plat \u00e0 tarte.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Mettre un \u0153uf dans le riz et m\u00e9langer avec la main.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Verser le riz sur la tarte et \u00e9galiser.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Dorer la surface de la tarte avec un jaune d\u2019\u0153uf \u00e0 l\u2019aide d\u2019un pinceau.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Placer la tarte pendant environ 25 \u00e0 30 minutes dans un four \u00e0 240 degr\u00e9s.<\/span><\/p>\n<p><span style=\"color: #333399;\">&#8211; Une fois la tarte sortie du four, attendre au moins quelques heures avant de
