Pourtant sa consommation est en baisse&#8230; et manger du lapin est loin d&rsquo;\u00eatre un r\u00e9flexe hebdomadaire. <\/strong><\/span><\/p>\n<p><span style=\"color: #800000;\"><strong>Pour les gourmets voici une recette de lapin au truffes.<\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>La chair du lapin est tendre et les  truffes en rel\u00e8vent facilement le go\u00fbt. Pour r\u00e9aliser cette recette, de  petites quantit\u00e9s de truffes suffisent. L&rsquo;ar\u00f4me des truffes se m\u00e9lange harmonieusement aux  saveurs des l\u00e9gumes et de la viande. Pour profiter au maximum du parfum  des truffes, il faut les r\u00e2per au dernier moment.<\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\">2 carottes moyennes,<br \/>\n2 oignons moyens,<br \/>\n2 clous de girofle,<br \/>\nquatre \u00e9pices (noix de muscade, clous de girofle, gingembre et cannelle m\u00e9lang\u00e9s en proportions \u00e9quivalentes),<br \/>\n1 branche de thym,<br \/>\n2 ou 3 feuilles de laurier,<br \/>\n1 lapin d&rsquo;environ 1 kg 250,<br \/>\n4 \u00e0 5 cuill\u00e8res \u00e0 soupe de graisse de canard,<br \/>\n100 g de lard frais,<br \/>\n200 g de petits oignons blancs,<br \/>\n3 \u00e0 4 cuill\u00e8res \u00e0 soupe de beurre,<br \/>\n1 cuill\u00e8re \u00e0 soupe de farine,<br \/>\n70 cl de Pineau blanc,<br \/>\n<strong>15 g de truffes de l&rsquo;Is\u00e8re<\/strong><br \/>\nsel, poivre.<br \/>\n(4 personnes)<\/span><\/p>\n<p>Eplucher les carottes pour les couper en petits morceaux. Epluchez  alors les oignons et piquez-les avec les clous de girofle. Placez les  carottes et les oignons dans une casserole avec une bonne pinc\u00e9e de  quatre \u00e9pices, le thym, le laurier et 500 ml d&rsquo;eau.<\/p>\n<p>Portez  lentement \u00e0 \u00e9bullition et laisser cuire 1 heure sans couvrir pour  laisser s&rsquo;\u00e9vaporer une partie du liquide. Passez le bouillon au chinois  et r\u00e9servez-le. Retirez les l\u00e9gumes. D\u00e9couper le lapin (patte arri\u00e8re,  patte avant, poitrine, r\u00e2ble et t\u00eate). Veillez \u00e0 bien nettoyer tous les  morceaux.<\/p>\n<p>Epongez-les ensuite \u00e0 l&rsquo;aide d&rsquo;un torchon. Faites dorer  le lapin de tous les c\u00f4t\u00e9s \u00e0 petit feu dans une cocotte avec un petit  peu de graisse de canard, sortez-le et maintenez-le au chaud.<\/p>\n<p>Faites  cuire le lard pr\u00e9alablement d\u00e9coup\u00e9 en petits lardons dans la graisse  de canard chaude. Ajoutez les lardons au lapin pr\u00e9cuit.<\/p>\n<p>Lavez la  cocotte. Epluchez les petits oignons blancs et faites-les revenir dans  la casserole avec le beurre. Ajoutez la farine et laissez prendre  pendant environ une minute \u00e0 petit feu. Versez le vin blanc, puis  incorporez la viande, le lard et le bouillon de l\u00e9gumes.<\/p>\n<p>R\u00e2pez  les truffes sur le tout, salez et poivrez l\u00e9g\u00e8rement et laissez cuire \u00e0  feu doux et sans couvrir pendant environ 45 minutes.<\/p>\n<p><span style=\"color: #000080;\">Servez&#8230; et r\u00e9galez vous!<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>La consommation de lapin a baiss\u00e9.
