{"id":32200,"date":"2012-10-22T18:16:01","date_gmt":"2012-10-22T16:16:01","guid":{"rendered":"http:\/\/staging.sillon38.com\/?p=32200"},"modified":"2012-10-22T18:16:01","modified_gmt":"2012-10-22T16:16:01","slug":"la-choucroute-d-alsace-igp","status":"publish","type":"post","link":"https:\/\/www.sillon38.com\/blog\/2012\/10\/22\/la-choucroute-d-alsace-igp\/","title":{"rendered":"La choucroute d&rsquo; Alsace IGP"},"content":{"rendered":"<p><span style=\"color: #000080;\">L<a href=\"http:\/\/alimentation.gouv.fr\/indication-geographique-protegee\">\u2019indication g\u00e9ographique prot\u00e9g\u00e9e<\/a> (IGP) dont b\u00e9n\u00e9ficie d\u00e9sormais la \u00ab\u00a0Choucroute d\u2019Alsace\u00a0\u00bb, permet de prot\u00e9ger un savoir-faire alsacien ancestral. <\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>Pour b\u00e9n\u00e9ficier de l\u2019appellation<\/strong>, les choux utilis\u00e9s  doivent \u00eatre produits dans la r\u00e9gion et peser au minimum 3 kilos chacun  et avoir \u00ab\u00a0un maximum de 3 feuilles l\u00e9g\u00e8rement vertes sur le dessus du  chou apr\u00e8s enl\u00e8vement des feuilles enveloppantes\u00a0\u00bb, selon le cahier des  charges de l\u2019appellation. Ce dernier pr\u00e9voit \u00e9galement une fermentation  naturelle, c\u2019est-\u00e0-dire sans ajout de ferments ni modification de la  temp\u00e9rature.<\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>A savoir <\/strong> : Les choux sont plant\u00e9s de courant avril \u00e0  d\u00e9but juin, selon les vari\u00e9t\u00e9s (pr\u00e9coces ou tardives) et r\u00e9colt\u00e9s,  selon leur \u00e9tat de maturit\u00e9 et des conditions climatiques, de fin  juillet \u00e0 fin novembre de la m\u00eame ann\u00e9e.<\/span><\/p>\n<h2><span style=\"color: #000080;\"><a name=\"h2_la-cuisson-aussi-est-reglementee\"><\/a>La cuisson aussi est r\u00e9glement\u00e9e<\/span><\/h2>\n<p><span style=\"color: #000080;\">La cuisson doit avoir lieu en Alsace, dans des cuiseurs (cuisson en  continu) ou dans des marmites.
