Amoureux des espaces, des b\u00eates et des produits de la terre, St\u00e9phane Blohorn est un homme de passion et d\u2019action.<\/p>\n<p>Il le prouve le 27 juin 2005 en rachetant la marque et les fonds de commerce parisiens de la maison Androu\u00ebt. C&rsquo;est une marque de fromagerie de d\u00e9tail bien connue des amateurs et passionn\u00e9s de fromage dans le monde entier. St\u00e9phane Blohorn cr\u00e9e le groupe Androu\u00ebt Alliance, fort de six fromageries fines \u00e0 Paris &#8211; trois en rive gauche, trois en rive droite- et d&rsquo;une \u00e0 Stockholm o\u00f9, tient-il \u00e0 pr\u00e9ciser, \u00ab\u00a0on vend du bleu du Vercors Sassenage\u00a0\u00bb.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2008\/08\/stephane-blohorn.jpg\" alt=\"stephane-blohorn.jpg\" \/><\/p>\n<p><em>St\u00e9phane Blohorn, fromager affineur et d\u00e9taillant depuis trois ans,  a \u00e9t\u00e9 intronis\u00e9 \u00e0 La Chapelle-en-Vercors par la Confr\u00e9rie du bleu du Vercors Sassenage<\/em>. <em>Un ambassadeur qui s&rsquo;imposait&#8230;<\/em><\/p>\n<p>\u00ab\u00a0La maison Androu\u00ebt, raconte t-il, aura un si\u00e8cle l&rsquo;an prochain. Henri Androu\u00ebt a fait oeuvre de pionnier en France en rassemblant toutes les vari\u00e9t\u00e9s de fromages, en les affinant et en les vendant aux Parisiens. A l&rsquo;\u00e9poque, ceux que l&rsquo;on appelait les BOF (beurre oeufs fromage) ne vendaient que des fromages de leur r\u00e9gion. M.Androu\u00ebt, breton mont\u00e9 \u00e0 Paris, a eu l&rsquo;id\u00e9e d&rsquo;acheter les fromages tr\u00e8s jeunes -il n&rsquo;y avait pas de cha\u00eene du froid, bien s\u00fbr- de proc\u00e9der \u00e0 leur affinage sous la boutique et de les mettre en vente \u00e0 maturit\u00e9. Inutile de dire que, vu le succ\u00e8s de l&rsquo; entreprise, il a \u00e9t\u00e9 tr\u00e8s vite suivi et copi\u00e9\u00a0\u00bb.<\/p>\n<p>Belle histoire que celle d&rsquo; Henri Androu\u00ebt, qui a d\u00e9but\u00e9 comme colporteur chez Gervais pour devenir un ma\u00eetre fromager de renomm\u00e9e internationale. En  1909, il a ce coup de g\u00e9nie de parier sur l&rsquo;une des grandes richesses de la France: ses fromages.  Il s&rsquo;agit tout simplement de faire go\u00fbter les fromages de toutes les r\u00e9gions de France \u00e0 des Parisiens ignorant la diversit\u00e9 de la production de leur pays. L\u2019histoire de la maison commence. Henri Androu\u00ebt se met \u00e0 son compte et ouvre l\u2019ann\u00e9e suivante une cr\u00e9merie situ\u00e9e rue d\u2019Amsterdam. La maison Androu\u00ebt est n\u00e9e, et avec elle l\u2019affinage comme principe de production. Au milieu des ann\u00e9es 20, Henri Androu\u00ebt propose aux Parisiens un \u00e9ventail de cent fromages. C&rsquo;est du luxe!<\/p>\n<p>\u00ab\u00a0Nous essayons de perp\u00e9tuer cette tradition, poursuit St\u00e9phane Blohorn, avec pour principes, la s\u00e9lection et l&rsquo;affinage. C&rsquo;est un m\u00e9tier, l&rsquo;affinage! On ne vend pas de l&rsquo;\u00e2ge, du mill\u00e9sime, mais une qualit\u00e9 gustative, un plaisir gastronomique. Ce que nous recherchons, c&rsquo;est qu&rsquo;un fromage propos\u00e9 \u00e0 la consommation d\u00e9veloppe pleinement la typicit\u00e9 de son terroir\u00a0\u00bb.<\/p>\n<p>Du go\u00fbt, du nez, du savoir-faire,  de l&rsquo;\u00e9tiquette, tout cela fait partie des qualit\u00e9s du ma\u00eetre affineur. Obtenir un fromage \u00e0 la meilleure saveur possible est certes affaire de go\u00fbt. Par exemple, un saint-marcellin frais peut devenir, selon l\u2019inspiration de l\u2019affineur, un saint-marcellin \u00e0 la p\u00e2te brisante et recouvert d\u2019un p\u00e9nicillium gris-vert ou un saint-marcellin \u00e0 la cro\u00fbte ferme et \u00e0 la p\u00e2te onctueuse. Dans un cas comme dans l\u2019autre c\u2019est la gestion de son vieillissement qui en fera un produit affin\u00e9 de fa\u00e7on optimale.<\/p>\n<blockquote><p>La totalit\u00e9 des 250 fromages mis en vente dans les fromageries du groupe est \u00e9labor\u00e9e au lait cru. L\u2019\u00e9quipe Androu\u00ebt continue d\u2019arpenter les campagnes et travaille sans cesse \u00e0 augmenter la part des fromages fermiers, c\u2019est-\u00e0-dire fabriqu\u00e9s selon des m\u00e9thodes artisanales. Pr\u00e8s de 80% des fromages sont fran\u00e7ais. Les autres proviennent d\u2019Angleterre, de Belgique, d\u2019Espagne, de Gr\u00e8ce, d\u2019Italie, des Pays-Bas et de Suisse. La r\u00e9partition des laitages est la suivante : vache 65%, ch\u00e8vre 25%, brebis 10%.<\/p><\/blockquote>\n<p>St\u00e9phane Blohorn g\u00e8re son entreprise seul mais, pr\u00e9cise t-il, \u00ab\u00a0entour\u00e9 de grands professionnels\u00a0\u00bb. C&rsquo;est une PME de 15 personnes.
