{"id":40956,"date":"2013-11-14T10:55:45","date_gmt":"2013-11-14T08:55:45","guid":{"rendered":"http:\/\/staging.sillon38.com\/?p=40956"},"modified":"2013-11-14T10:55:45","modified_gmt":"2013-11-14T08:55:45","slug":"mieux-connaitre-la-truffe-pour-mieux-la-cultiver","status":"publish","type":"post","link":"https:\/\/www.sillon38.com\/blog\/2013\/11\/14\/mieux-connaitre-la-truffe-pour-mieux-la-cultiver\/","title":{"rendered":"Mieux conna\u00eetre la truffe pour mieux la cultiver"},"content":{"rendered":"<div>\n<p><strong>Dep<span style=\"color: #000080;\">uis une vingtaine d\u2019ann\u00e9es, la production fran\u00e7aise de truffe ne  suffit plus \u00e0 r\u00e9pondre \u00e0 la demande, ce qui n\u00e9cessite une importation  accrue de ce champignon. <\/span><\/strong><\/p>\n<p><span style=\"color: #000080;\"><strong>Afin de pallier ce probl\u00e8me, des chercheurs de  l\u2019Inra, de l\u2019IRD, du CNRS, du Cirad et de l\u2019Universit\u00e9 Montpellier 2, en  collaboration avec la F\u00e9d\u00e9ration Fran\u00e7aise des Trufficulteurs, ont  \u00e9tudi\u00e9 la truffe noire du P\u00e9rigord sous toutes les coutures. <\/strong><\/span><\/p>\n<p><span style=\"color: #000080;\"><strong>En voici les r\u00e9sultats<\/strong>.<br \/>\n<\/span><\/div>\n<p><span style=\"color: #000080;\">La culture de la truffe conna\u00eet depuis les  ann\u00e9es 1990 en France une stagnation de sa production qui s\u2019\u00e9tablit  autour de 30 tonnes par an, alors qu\u2019il y a 50 ans elle \u00e9tait d\u2019environ  100 tonnes par an et beaucoup plus \u00e0 la fin du 19e si\u00e8cle. <\/span><\/p>\n<p><span style=\"color: #000080;\">Afin de  comprendre les raisons de ce recul important et de trouver des solutions  pour am\u00e9liorer la situation, les chercheurs \u00e9tudient la truffe sous  tous ses aspects : g\u00e9nome, \u00e9cologie, nutrition, d\u00e9veloppement,  reproduction et interactions avec les plantes, les autres champignons et  les bact\u00e9ries. <\/span><\/p>\n<p><span style=\"color: #000080;\">Les connaissances avancent, mais des questions  importantes restent encore ouvertes : Quels facteurs influent sur la  croissance et les qualit\u00e9s aromatiques de la truffe ? Quelles sont les  techniques de culture les plus indiqu\u00e9es ? Comment am\u00e9liorer la  productivit\u00e9 des truffi\u00e8res plant\u00e9es ?<\/span><\/p>\n<div>\n<p><span style=\"color: #000080;\">Pour  r\u00e9pondre \u00e0 ces questions, six laboratoires et deux organisations  professionnelles se sont regroup\u00e9es autour du projet \u00ab Bases d\u2019une  intensification \u00e9cologique durable des \u00e9cosyst\u00e8mes truffiers \u00bb, Systruf<sup>1<\/sup>. Voici quelques r\u00e9sultats pr\u00e9sent\u00e9s lors du colloque de cl\u00f4ture du projet.<\/span><\/p>\n<p><span style=\"color: #000080;\"><a id=\"eztoc2850161_1\" name=\"eztoc2850161_1\"><\/a><\/span><\/p>\n<h2><span style=\"color: #000080;\">La croissance des truffes d\u00e9pend de la photosynth\u00e8se de l\u2019arbre h\u00f4te, et non de la mati\u00e8re organique venue du sol<\/span><\/h2>\n<p><span style=\"color: #000080;\">Contrairement  \u00e0 ce que l\u2019on pensait jusqu\u2019alors, la truffe se nourrit des sucres  produits par les feuilles de l\u2019arbre h\u00f4te et transf\u00e9r\u00e9s aux racines  auxquelles elle s\u2019associe. <\/span><\/p>\n<p><span style=\"color: #000080;\">Par cons\u00e9quent, plus l\u2019arbre h\u00f4te se portera  bien, plus il aura tendance \u00e0 produire des truffes. Il faut donc \u00e9viter  les tailles d\u2019\u00e9t\u00e9 qui freinent la croissance de l\u2019arbre. <\/span><\/p>\n<p><span style=\"color: #000080;\">Par ailleurs,  le manque d\u2019eau est l\u2019un des facteurs qui limitent le plus la  productivit\u00e9 de la truffi\u00e8re puisqu\u2019il agit directement sur la  croissance des arbres.<\/span><\/p>\n<p><span style=\"color: #000080;\"><a id=\"eztoc2850161_2\" name=\"eztoc2850161_2\"><\/a><\/span><\/p>\n<h2><span style=\"color: #000080;\"><a href=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2013\/11\/TRUFFES-INRA.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-40958\" title=\"TRUFFES INRA\" src=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2013\/11\/TRUFFES-INRA.jpg\" alt=\"TRUFFES INRA\" width=\"595\" height=\"446\" srcset=\"https:\/\/www.sillon38.com\/blog\/wp-content\/uploads\/2013\/11\/TRUFFES-INRA.jpg 595w, https:\/\/www.sillon38.com\/blog\/wp-content\/uploads\/2013\/11\/TRUFFES-INRA-300x225.jpg 300w\" sizes=\"auto, (max-width: 595px) 100vw, 595px\" \/><\/a><\/span><\/h2>\n<h2><span style=\"color: #000080;\"><a href=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2013\/11\/TRUFFES-INRA.jpg\"><\/a>La truffe peut \u00eatre associ\u00e9e \u00e0 de nombreuses esp\u00e8ces v\u00e9g\u00e9tales<\/span><\/h2>\n<p><span style=\"color: #000080;\">Si  le ch\u00eane ou le noisetier sont les esp\u00e8ces les plus pr\u00e9conis\u00e9es pour la  plantation d\u2019une truffi\u00e8re, elles ne sont pas les seules que la truffe  peut coloniser. En effet, dans les truffi\u00e8res naturelles du Sud-Est de  la France, on trouve souvent du myc\u00e9lium de truffes associ\u00e9 aux racines  de plantes herbac\u00e9es comme les orchid\u00e9es.<\/span><\/p>\n<p><span style=\"color: #000080;\"> Conserver une certaine  diversit\u00e9 d\u2019esp\u00e8ces v\u00e9g\u00e9tales pourrait donc permettre une meilleure  productivit\u00e9 des truffi\u00e8res.<\/span><\/p>\n<p><span style=\"color: #000080;\"><a id=\"eztoc2850161_3\" name=\"eztoc2850161_3\"><\/a><\/span><\/p>\n<h2><span style=\"color: #000080;\">Le travail du sol doit se faire en dehors de la p\u00e9riode de production des truffes<\/span><\/h2>\n<p><span style=\"color: #000080;\">Le  travail du sol est important pour limiter la concurrence d\u2019autres  esp\u00e8ces et favoriser la f\u00e9condation (la truffe ayant une reproduction  sexu\u00e9e). Cependant, il est \u00e0 limiter pendant la p\u00e9riode de croissance de  l\u2019ascocarpe (la partie comestible de la truffe) pour ne pas d\u00e9truire le  lien qui relie arbre et truffe.<\/span><\/p>\n<p><span style=\"color: #000080;\"><a id=\"eztoc2850161_4\" name=\"eztoc2850161_4\"><\/a><\/span><\/p>\n<h2><span style=\"color: #000080;\">Les bact\u00e9ries du sol pourraient participer au d\u00e9veloppement de la truffe, voire \u00e0 la formation de son ar\u00f4me<\/span><\/h2>\n<p><span style=\"color: #000080;\">Plusieurs  esp\u00e8ces de bact\u00e9ries parmi celles pr\u00e9sentes dans le sol ont \u00e9t\u00e9  retrouv\u00e9es \u00e0 l\u2019int\u00e9rieur de la truffe noire du P\u00e9rigord. <\/span><\/p>\n<p><span style=\"color: #000080;\">Les \u00e9tudes  sugg\u00e8rent que ces bact\u00e9ries pourraient jouer un r\u00f4le dans la nutrition,  le d\u00e9veloppement et la reproduction de la truffe. Elles pourraient entre  autres participer \u00e0 la formation de l\u2019ar\u00f4me si caract\u00e9ristique de la  truffe.<\/span><\/p>\n<p><span style=\"color: #000080;\">Les r\u00e9sultats acquis gr\u00e2ce au projet  Systruf, tout en posant de nouvelles questions, permettent de revisiter  les nombreuses pratiques empiriques de la trufficulture. Ils ouvrent  les perspectives d&rsquo;une am\u00e9lioration de la production de la truffe noire  du P\u00e9rigord et, par extension, des autres esp\u00e8ces de truffe cultiv\u00e9es en  Europe. <\/span><\/p>\n<p><span style=\"color: #000080;\">En dehors des retomb\u00e9es \u00e9conomiques directes r\u00e9sultant de  l\u2019augmentation de la production, les travaux de Systruf pourraient  contribuer en r\u00e9gion m\u00e9diterran\u00e9enne au maintien ou au d\u00e9veloppement  d\u2019une activit\u00e9 agro-foresti\u00e8re. <\/span><\/p>\n<p><span style=\"color: #000080;\">De nouveaux projets sont en cours  d\u2019\u00e9laboration pour anticiper les effets possibles des changements  climatiques et am\u00e9liorer la gestion de l\u2019eau dans les truffi\u00e8res.<\/span><\/p>\n<p><span style=\"color: #000080;\"><sup>1.  Financ\u00e9 par l\u2019Agence Nationale de la Recherche et la R\u00e9gion  Languedoc-Roussillon sur la p\u00e9riode 2009-2013, le projet a r\u00e9uni le  Centre d\u2019Ecologie Fonctionnelle et Evolutive (CNRS, Inra, Universit\u00e9s  Montpellier 1, 2 et 3, Montpellier SupAgro, EPHE, CIRAD, IRD), les  laboratoires Interactions arbres\/microorganismes (Inra, Universit\u00e9 de  Lorraine), Biog\u00e9ochimie des \u00e9cosyst\u00e8mes forestiers de l\u2019Inra,  Agronomie-Environnement (Inra, Universit\u00e9 de Lorraine), Ecologie et  \u00e9cophysiologie foresti\u00e8re (Inra, Universit\u00e9 de Lorraine), Symbioses  tropicales et m\u00e9diterran\u00e9ennes (CIRAD, IRD, Universit\u00e9 Montpellier 2,  SupAgro), ainsi que la F\u00e9d\u00e9ration Fran\u00e7aise des Trufficulteurs (FFT) et  le Centre d\u2019\u00e9tudes techniques et \u00e9conomiques foresti\u00e8res (Cetef).<\/sup><\/span><\/div>\n","protected":false},"excerpt":{"rendered":"<p>..
