Il ne fait aucun doute que Bleu du Vercors Sassenage-St Marcellin-Picodon et l&rsquo;ensemble des fromages de nos producteurs fermiers compl\u00e8teront \u00e0 merveille le plateau propos\u00e9 par St\u00e9phane Blohorn, grand amateur des fromages produits en Dauphin\u00e9.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/staging.sillon38.com\/wp-content\/uploads\/2008\/12\/fromages.jpg\" alt=\"fromages.jpg\" \/><\/p>\n<p><em><strong>Comment organiser un beau plateau?<\/strong><\/em><\/p>\n<p>Les repas de f\u00eates sont souvent copieux, il faut essayer de se limiter en nombre de fromages, mais pour \u00eatre certain de proposer un choix au go\u00fbt de chacun, il faut quand m\u00eame rechercher la vari\u00e9t\u00e9. L\u2019id\u00e9al est de rassembler tous les laits (vache, ch\u00e8vre, brebis) et toutes les p\u00e2tes (dures et molles) et de respecter les saisons. C\u2019est un bon crit\u00e8re pour proposer une s\u00e9lection de sept fromages. Par exemple : Comt\u00e9 de No\u00ebl de 26 mois, Roquefort, Vacherin Mont d\u2019Or, Roves des Garrigues, P\u00e9rail de l\u2019Aveyron, St Nectaire et Brillat Savarin (aux truffes pour les privil\u00e9gi\u00e9s et connaisseurs)<\/p>\n<p><em><strong>Que faut-il boire avec du fromage un jour de f\u00eate ?<\/strong><\/em><\/p>\n<p>Le go\u00fbt des fromage \u00e9volue d\u2019un moment \u00e0 un autre et il est tr\u00e8s difficile d\u2019avoir un avis d\u00e9finitif. Un accord simple est le plus harmonieux : le tanin et la force alcoolique, sauf exceptions, ne conviennent gu\u00e8re aux fromages. Pour un plateau de f\u00eate, nous recommandons par exemple un Meursault blanc ou un Pernand-Vergelesses rouge.<\/p>\n<p><em><strong>Et en ce qui concerne le pain ?<\/strong><\/em><\/p>\n<p>Le pain de campagne sans h\u00e9sitation ! Il est difficile de trouver un pain qui va convenir \u00e0 tous les fromages. Aux noix, aux c\u00e9r\u00e9ales, farine blanche ou compl\u00e8te&#8230; chaque pain pourra convenir sur un fromage en particulier.<\/p>\n<p><em><strong>Dans quel ordre faut-il manger vos fromages sur un plateau ?<\/strong><\/em><\/p>\n<p>Le mieux, sans distinction de type de lait ou de p\u00e2te, est de manger les fromages selon la force de leur go\u00fbt: du plus doux au plus puissant. S\u2019il y a du Roquefort sur le plateau, en r\u00e8gle g\u00e9n\u00e9rale, c\u2019est celui qu\u2019il faut manger en dernier car son go\u00fbt est vraiment dominant.<\/p>\n<blockquote><p><strong>Accorder nos vins et fromages locaux <\/strong><\/p>\n<p><strong>En ce qui me concerne, j&rsquo;appr\u00e9cie\u00a0 d&rsquo;accorder vins et fromages locaux. <\/strong><\/p>\n<p><strong>Avec un St Marcellin je propose un Beaujolais, avec un picodon, un C\u00f4te du Rh\u00f4ne village ou un St Joseph blanc et pour faire de l&rsquo;inattendu une clairette de Die. Avec les tommes et fromages de Savoie, mon choix n&rsquo;est pas tr\u00e8s original: les vins de Savoie de mes amis viticulteurs de Chapareillan.<\/strong><\/p>\n<p><strong> Et le Bleu du Vercors Sassenage? Il se marie avec de nombreux vins.
