D\u00e9j\u00e0 prot\u00e9g\u00e9e  par le signe Label Rouge qui garantit la qualit\u00e9 des produits, l\u2019origine  g\u00e9ographique du Jambon d\u2019Auvergne est maintenant reconnue par  l\u2019obtention de l\u2019IGP.<\/span><\/p>\n<p><span style=\"color: #000080;\">\u00ab\u00a0L\u2019Auvergne est une r\u00e9gion reconnue comme productrice de salaison de  qualit\u00e9\u00a0\u00bb explique l\u2019animateur du CSA. Historiquement, le s\u00e9chage et le  salage des jambons \u00e9taient r\u00e9alis\u00e9s, en hiver, dans les fermes pour  permettre la conservation de la viande toute l\u2019ann\u00e9e. Ces techniques  \u00e9taient particuli\u00e8rement adapt\u00e9es aux basses temp\u00e9ratures et aux vents  rencontr\u00e9s en altitude dans le Massif-Central.<\/span><\/p>\n<p><span style=\"color: #000080;\">Ce savoir-faire particulier se distingue, en Auvergne, par une dur\u00e9e  de s\u00e9chage longue, garantie \u00e0 8 mois minimum et l\u2019adjonction d\u2019ail dans  le sel de salage. \u00ab\u00a0Cela offre le caract\u00e8re et les ar\u00f4mes de noisette et  d\u2019ail si particuliers au jambon d\u2019Auvergne\u00a0\u00bb explique Bernard L\u00e9pinay.<\/span><\/p>\n<p><span style=\"color: #000080;\">L\u2019IGP permet l\u2019inscription de ce savoir-faire dans son territoire  d\u2019origine en garantissant l\u2019origine de fabrication des jambons sur une  zone \u00e9tendue sur toute l\u2019Auvergne, except\u00e9 le Nord de l\u2019Allier, plus le  canton d\u2019Ussel en Corr\u00e8ze.<\/span><\/p>\n<p><span style=\"color: #000080;\">\u00ab\u00a0On esp\u00e8re maintenant obtenir l\u2019IGP pour les saucissons d\u2019Auvergne  qui sont issus de la m\u00eame histoire et du m\u00eame savoir-faire\u00a0\u00bb annonce  l\u2019animateur du CSA.
